Iberian casteñetas, also called “castanets”, is a non-muscular structure that is constituted by the mandibular salivary gland of the pig, what we commonly know as “tonsils”. From each animal come two units with a weight of approximately 50 grams each, have a texture very similar to gizzards and criadillas. Admit well any of the usual preparations of sweetbreads, grilled, garlic, oloroso, etc. Its gelatinous fabric and its strong flavor is highly appreciated by gourmets. They are served in vacuum-packed trays weighing approximately 1 kg.
