Iberian Gill is the layer of fat that hangs under the pig’s face. Like bacon, it consists of skin, layers of fat and layers of meat. It is used as an essential seasoning in traditional stews or as a supplement in culinary recipes. It is also ideal for grilling on barbecues by adding a little salt. It is served in whole or half pieces vacuum packed.
