Cured acorn Iberian gill
Cured acorn Iberian gill. It is the layer of fat that hangs under the pig’s face. Like bacon, it consists of skin, layers of fat and layers of meat. This product comes from animals raised in an Alpine regime with acorns, and once salted and cured it has the same culinary practices as Cured Pork Bacon, as it is practically the same. It is served in whole pieces or in half vacuum-packed pieces.
