Iberian fan

Iberian fan is a piece that wraps the ribs on its exterior, rich in fat veins. Its name is due to the fact that the cutting comes directly from the fan-shaped cutter, with thin fillets weighing approximately 150 grams each. As an important advice when consuming it, do not take away the fat, which is what makes it taste very tasty and juicy. It is usually consumed whole in fillets, especially indicated for the barbecue or coals, although also its preparation can be made to the iron or to cubes, like fundamental part of dishes like for example “rice with fan”. Served in vacuum trays weighing 1 kg
