Iberian loinstrap
Iberian loinstrap is an elongated, cylindrical piece that is located near the spine and under the ribs in the lower back of the pig. It is one of the most appreciated pieces of the Iberian pig, with a very lean and tasty meat that admits any form of preparation, roasted, stuffed, grilled, fried, grilled or as stuffed and battered booklets. Each piece weighs approximately 2,500 kg and is served in vacuum-packed 1 kg pieces or in fillet trays.
