Iberian pen
Iberian pen is a piece of triangular shape located in the back or finer part of the loincloth. It has a triangular shape, its denomination comes from its resemblance to a pen, with an approximate weight of 250 grams each unit. Its fats and fibers have similarity to the high part of the Iberian ham, very tasty to the palate by its texture and quality. It is ideal for the realization of many culinary recipes, for griddle, fry, barbecue and even baked. It is served in vacuum trays weighing approximately 1 kg.
