Iberian pork pestorejo
Iberian pork pestorejo or also called “Pig Face” is the skin that covers the facial muscles of the pig’s face, including ears and hills. It is characterized by having a cartilaginous texture, with a high protein content and low fat. There are many culinary uses that apply to this product, from completely for the making of pots and pans to its consumption to grilled or fried directly. It is also often used to make “minced” by cooking and letting it cool. In some points of our geography is one of the most demanded tapas in the restoration. Vacuum-packed whole wares with an approximate weight of 1,500 kg are served.
